Grilling this 4th of July!

As we get closer to celebrating the 4th of July, when we remember this country’s Independence, I love the time we spend with family, friends, at the town’s parade, watching the fireworks and of course good grilling. I try today a new combination of ingredients to spice my grill steaks. Whether you will be grilling this 4th of July or not, try this tangy and smoky rub for your steaks. I promise this recipe will be a quick and delicious fix for any family gathering or celebration.

Grilled Spiced Steak Salad

Spiced rub steaks

6 Top sirloin steaks about (3-4 oz each)
Tangy Rub – ½ Tsp of smoke paprika
½ Tsp of garlic powder
1 spoonful of dry parsley
½ Tsp of salt and pepper
¼ Tsp of cumin
¼ of annatto powder (Achiote) or Goya seasoning
Juice of ½ lime
1 Romaine lettuce head
¼ bag of arugula
1 Roma tomato
2 Persian cucumbers
¼ cup or Parmesan croutons
2 limes
¼ Tbsp of mustard
¼ cup of extra virgin olive oil
1 Spoonful of grated Parmesan cheese
Salt, pepper
Mix all the ingredients for the rub. Then, drizzle olive oil over the sirloin steak and season with the rub. This rub seasoning gives the steaks a tangy, smoky flavor without overpowering its taste and really has a subtle kick at the end. Then, set aside to let it marinade while you prepare the salad.
Chop the romaine lettuce, slice the roma tomatoes and cucumbers. Now, in a mason jar mix all the ingredients for the dressing: lime juice, olive oil, salt, pepper, parmesan cheese, and mustard and stir. You will get a creamy tangy dressing. Then toss all salad ingredients with the dressing. Yum!
Get your grill ready at medium heat and grill each steak on each side for about 5-8 minutes depending how you like your steak. Since I like mine more like medium to well done I left them on the grill for about 8 minutes each side.  Once ready, remove steaks from the grill and let them rest for 5 minutes. Get salad ready, top it with steaks and dinner is ready.  Sounds simple and delicious, right?

Summer is here: have your snack shack ready for your kids!

Now that the kids are home from school for the summer break,  we have to keep them busy with sports, crafts and other fun activities to make sure they are entertain.  But while they burn all that kid energy they also get hungrier.  Therefore, I need to  have in hand a variety of healthy yummy snacks for my 7 and 4 year old sons.  Think about your kids favorite food and snacks, so you can prepare in advance and have them ready.   Here are some of my kids favorite that I hope you will enjoy too.
